My Baking Favourites!

I’m not the best baker in the world, but I absolutely love to bake! Over the past few months, I have been trying out a bunch of new recipes and attempting to master some of my favourite desserts. I’ve been documenting it all on my new Instagram account: @sugardippedcocoa 🍫


For any fellow bakers out there, I thought I would share my tried & tested baking favourites so you can give it a go yourself, knowing you won’t end up with a baking fail!

Deliciously Moist Chocolate Cupcakes

I wanted to try out a chocolate cupcake recipe that uses oil instead of butter. I prefer the texture of cakes made using oil – they are more moist, less dense and deliciously fudgy. Using this fantastic recipe from Life, Love and Sugar, I was able to whip up a batch of cupcakes in less than half an hour. It’s an extremely simple one-bowl recipe which takes less than 5 minutes to make and they’ll be out of the oven 20 minutes later!

If you want to make this recipe more festive for Christmas, you can add a drop or two of peppermint extract to your frosting, then garnish with crushed candy canes.

Ultimate Fluffy American Pancakes

I have made pancakes about five times over the past few months, but it wasn’t until last week that I finally found the PERFECT pancake recipe! There are so many pancake recipes out there, many of which require buttermilk (something that I never have) or they require a little more effort, using egg whites, both baking powder and baking soda, or an entire stick of butter which just seems excessive to me. My perfect pancake recipe includes none of that nonsense – it’s all simple ingredients you already have at home (flour, baking powder, salt, sugar, an egg, milk and melted butter) and it’s an easy method of adding the wet to the dry!

You can see the difference a good recipe makes:

A few tips:

  • All your wet ingredients need to be at room temperature.
  • Combine your eggs and melted butter first, before adding the milk, otherwise your melted butter will solidify in the milk.
  • Do NOT over-mix, just lightly stir until all the ingredients are combined and you’re ready to go!

Quick & Easy Chocolate Oreo Parfait 

IMG-5654.jpgThis is a fantastic no-bake dessert that will impress any guest – and it takes less than 5 minutes to put together! All you need are some Oreo’s, whipped cream and store-bought chocolate mousse or chocolate custard. Grab yourself some fancy cups, and start layering all your ingredients on top of one-another.

First a layer of custard, then the crushed Oreo’s, the whipped cream – and repeat! The best thing about this recipe is how impressive it looks, yet it’s so simple to make.
