I am a complete choco-holic, so naturally, anything I bake is usually chocolate with a sprinkle of chocolate on top! However, I want to get into the habit of baking with different flavours – I baked a strawberries & cream cake last month and today, I tried out a lemon cake recipe!
If you don’t already know, I have an Instagram account called @sugardippedcocoa where I share everything that I bake. I created the account because I wanted a permanent place to share my baking creations and so I can feel inspired to try out new recipes – like this delicious lemon cake.
Unfortunately, I won’t actually get to eat much of this lemon cake as I baked it for some friends, but I tested out a slice to make sure it tastes good and it’s even better than good, it’s AMAZING!
I used this fantastic recipe from Simply Baking which resulted in a delicious, moist and zingy lemon cake that I’m sure all my friends will love. It’s a very simple recipe, all you have to do is combine the wet and dry ingredients, and you’ll have yourself a refreshing lemon cake in under 30 mins! What I really love about this cake is that the recipe doesn’t use too much sugar, instead it allows the citrus flavour to shine through and the lemon glaze I used on top soaks into the cake, adding a hint of sourness with each bite.
You can definitely experiment with the icing and perhaps try using lemon curd, lemon syrup or even a lemon buttercream. The cake provides the perfect base, but I did make a few adjustments:
- Added a pinch of salt
- Added the juice of one lemon instead of 2 tablespoons
- Used milk instead of sour cream
There is no salt listed on the ingredient list of this recipe which is quite surprising as salt is a staple ingredient in anything that I bake, so I added a pinch to balance out all the sweetness.
I also wanted the cake to be extra moist and juicy, with a strong lemon flavour so I added the juice of a whole lemon which actually wasn’t that much more than 2 tablespoons, but it was enough to really intensify the lemon flavour of the cake.
I never have any sour cream on hand, so I substituted with milk which worked great, but be careful not to add the milk all at once as you don’t want your batter to be runny – I ended up adding 1/4 cup milk.
All in all, do I recommend this recipe? ABSOLUTELY.
Would I bake this cake again? YES, and I’ll be saving more slices for myself next time!
